Fragrant spicy stir-fried duck~
Overview
I originally wanted to make a version of beer duck with sweet noodle sauce, but the taste of the sweet noodle sauce sold nearby was too different from the taste in my hometown. After trying it several times, I made this spicy stir-fried duck and it tasted good~

When the rapeseed oil is 60% hot, add the duck meat cut into small pieces and stir-fry (if there are large bones, such as duck heads, duck feet, duck necks, duck wings, etc., they need to be fried until golden brown on both sides, then add other duck meat and stir-fry together)

Fry the duck meat until the edges turn slightly yellow, add the pork belly and stir-fry to release the oil, until it turns slightly golden

Add ginger slices, garlic cloves, star anise, cinnamon and bay leaves and stir-fry

Add 3-4 tablespoons of spicy sauce and stir-fry until red oil emerges

Add green and red peppers and chestnuts and stir-fry

Add appropriate amount of water, bring to a boil and then turn to medium-low heat

Cover the pot and continue cooking over low heat

minutes before serving, add a few tied green onions (to prevent them from falling apart)

Cook until less than half of the soup is reduced, add a small amount of salt and sugar, stir well and serve
