Braised eggplant
Overview
When making braised eggplant, I usually choose the purple eggplant sold in the vegetable market to make it the most delicious. Braised eggplant is also my favorite. It is a great dish to go with rice. It is simple to make. As long as the heat is controlled well, it will be shiny and not greasy, making it look more appetizing.

Wash the eggplant and set aside

Hob cut into cubes

Pour an appropriate amount of oil into the pot and sauté the bean paste until fragrant. Add the eggplant to the pot and add half a bowl of boiling water.

Stir-fry for a few times. When the eggplant absorbs the water, add light soy sauce, salt and sugar and simmer.

Collect the juice and add it to taste. Stir-fry several times and sprinkle with chopped green onion. Remove from the pan.
