Overview

  1. What I bought from the Hui people's market was the upper brain part of the beef, but the meat seller didn't cut it into fine meat. The upper brain meat was tender and could be fried or grilled. There was also some meat with oil and fascia on the side. I used a knife to cut out the fine meat from the upper brain meat, and marinated the remaining pieces of meat.   7. Simmer for 40 minutes and turn off the heat. It's good if the chopsticks can be gently pulled to pierce. If you cook it for too long, the meat will become chewy.

  9. Strain out the spices and butter from the broth, clarify the soup, and soak the meat pieces back into the broth. The meat can be made into cold beef, and the soup can be used to cook beef noodles.
