Choose a wild turtle, kill it and scald it with boiling water to remove the membrane coating on the turtle's body and limbs

Choose half a black-bone chicken and cut it into roughly the same size as the soft-shell turtle for later use

Soaked Shiitake Mushrooms

Soak lotus seeds, fungus and lily together and set aside

Put the chicken pieces and turtle pieces into the pot together, add ginger and cooking wine and bring to a boil, remove the foam. Take out the meat pieces and wash them in cold water

Strain the original soup to remove impurities and put it into a pot (I used a pressure cooker because I don’t have a casserole). Add soft-shelled turtle and chicken pieces, add soaked lotus seeds, lilies, fungus, and shiitake mushrooms, and simmer together for half an hour

Remove the green onion segments, add yam, add salt and simmer for ten minutes

Add a little MSG to taste, sprinkle with chopped green onion and serve
