Noodles with black bean paste and melon rind sauce
Overview
Watermelon rind has the same nutritional value and effects as watermelon. Nowadays, watermelon rind is often used. This time, I used watermelon rind and black bean sauce to stir-fry the noodles. It tasted great.

Prepare dried tempeh

Soak dried tempeh in appropriate amount of cold water

Remove the green skin from the watermelon and cut into cubes

Heat up the oil in a pan, stir-fry onions and ginger until fragrant, add black bean paste and stir-fry

When the tempeh is fragrant, add the watermelon rind and stir-fry

Fry until the sauce thickens, add sugar and stir-fry

Add salt and stir-fry until evenly stirred, then turn off the heat and scoop out the fermented black bean paste and set aside

Add water to the pot and bring to a boil, put the noodles into the pot and cook

Drain the noodles and put them on a plate

Add black bean melon rind sauce, mix well and enjoy
