Prepare ginger slices, green onions, garlic, and star anise

Put water in the pot, wash the meat and put it in a pot of cold water, turn up the heat and bring it to a boil

Remove the scum after boiling the pot. The meat is very clean and has very little scum. It’s no problem to stew it directly, but this way you can remove some fat after cooking

Boil for two minutes, remove and drain

Heat a non-stick pan over medium-low heat, put the meat pieces in, add ginger slices and star anise, stir-fry together to release the oil
