Remove the roots and wash the bitter chrysanthemum, cut into 3cm pieces

Peel the preserved eggs and cut into eight. You can cut it with a knife or tie it into sections with thread.

Put peanuts in cold oil in a cold pot (usually the oil just covers the peanuts), and heat it up at the same time. After the oil is boiled, you can take out the peanuts. This will ensure that the peanuts will not be fried easily

Put the fried peanuts into the bitter chrysanthemum, add an appropriate amount of salt, a small amount of soy sauce, a small amount of sesame oil, an appropriate amount of old vinegar (i.e. Shanxi mature vinegar) and white sugar. (Note: This dish is sweet and sour, so add more vinegar and sugar). Mix well and add the preserved eggs before serving.
