Overview

I grew up in a place close to the sea. There is a kind of porridge called Chaoshan casserole porridge. It can be cooked with many ingredients, including dry goods, seafood, rivers, fresh turtles, snakes, turtles, frogs and birds. It has a fresh taste and winter vegetables are added to the seasoning. The cooking method is simple and basically the same. It’s just that the cooking time of different ingredients is different. The focus is on dipping. Each family has its own recipe. Stir frequently to prevent sticking. The ratio of water to rice is about 4 pounds of water to 1 pound of rice. Normally, the rice will not stick to the pan when put under boiling water, but it is better to stir more often.

  4. While making porridge, let's deal with the little geoduck. Cut it in the middle and tear off the membrane of the nose. Also remove the internal organs. Kill it and wash it. When buying small geoducks in the market, pick them yourself. Those with long noses can be quickly retrieved and sprayed with water. If you put them in a small plastic basin, shake them a little more and the water will naturally flow out more. Vendors will also help to deal with it.

  6. When the porridge is cooked, add the baby geoduck and ginger slices, mix well and season.

  7. Mix well and add salt and galangal powder. If you don’t have galangal powder, don’t add it.

  8. Add pepper, chicken powder, oil, winter vegetables, then pork slices and mix well.

  10. Mix well and take it out of the pot. Start seasoning after adding the baby geoducks. Keep cooking for about 1 minute to 1 and a half minutes, and cook over medium heat throughout.

  11. The color will be like this after cooking. If you cook it for a long time, the taste will be worse as it gets older. Serve with a dish of Puning bean paste for dipping.
