Stir-fried bean sprouts with leeks

The Spring Festival is coming soon, and we have eaten too much big fish and meat. You might as well try this side dish that can clear your intestines and relieve internal heat. Chives and bean sprouts, also commonly known as emerald silver sprouts, are delicious, beautiful, and cleanse the intestines and relieve internal heat!

Wash the leeks and cut into sections. Remove the roots and wash the bean sprouts, wash and shred the green onions, soak the spicy skin in water and chop finely and set aside.

Rinse the bean sprouts with boiling water, remove and set aside

Add the leek root and stir-fry for a few times. Don’t add the leek leaves yet. The leek leaves will cook easily

Add bean sprouts and stir-fry until cooked, add chicken essence

Turn off the heat, add the leek leaves, stir-fry until cooked, and remove from the pan. The remaining heat of the pot can be used to fry the leeks. If the fire is too high, the leeks will release water and turn yellow and wilted, which will affect the taste!
