Cut the eggplant into large pieces.

Microwave on high heat for about 5-7 minutes until the eggplant becomes soft.

Prepare the bowl of juice: 3 spoons of soy sauce, half a spoon of sugar, a quarter spoon of vinegar, a quarter spoon of chicken powder, 4g of salt, half of the minced green onion, half of the minced garlic, and half a bowl of water.

Add a few tablespoons of starch to the soft eggplant and mix well.

Add a small amount of oil in the pan and fry over medium-low heat.

Fry both sides until golden brown, set aside.

Sauté chopped green onions in a small amount of base oil.

Fry large chunks of tomatoes until soft and add star anise.

Add eggplant and peppers.

Add a bowl of juice and set over medium high heat to reduce the juice.

The eggplant has been coated in starch before, so there is no need to thicken it. Add minced garlic before serving.
