Use scissors to cut off the shrimp claws and arrows (a hard thorn on the shrimp head). Turn the back of the shrimp upward, cut along the center line of the spine, leave a section to the tail of the shrimp, remove the black shrimp line, and then place it on the plate in a herringbone shape.

Finely dice the garlic. Heat oil in a pan and add two-thirds of the garlic. Stir-fry over low heat until slightly brown and turn off the heat.
