Overview
The quick-serve dish of braised liver tips is simple to make and can be served in 5 minutes. It has a smooth texture, is crispy and tasty, and is a home-cooked dish suitable for all ages.

Soak fresh pork liver in cold water to remove blood. Pork liver needs to be repeatedly soaked in water before cooking. I soaked it for an entire afternoon and had to change the water repeatedly until it was basically free of blood.

Cut the pork liver in half lengthwise, cut into thin slices, add water, wash repeatedly, rinse well, and drain the water.

Put the cleaned pork liver slices into a plate, sprinkle with half a spoon of salt, 1 spoon of pepper, 1 spoon of corn starch, and 1 spoon of cooking wine. Knead evenly repeatedly to make the batter, add 1 tablespoon of cooking oil, and stir evenly to lock in the moisture.

Place the starched pork liver in the freezer for 5 minutes. This step will make it crispier and more tender, then take it out and set aside.

Wash and slice the peppers, peel, wash and slice the carrots into thin slices, peel and slice the garlic and set aside.

Add an appropriate amount of oil to the pot. The oil temperature is 50% hot. Slide in the sized pork liver slices. Use chopsticks to gently slide the pork liver into pieces. When the pork liver changes color and becomes slightly bloodshot on the surface, pour it out immediately to control the oil. Be sure not to grease the pork liver for too long. Keep an eye on it as you grease it. After it changes color, if there is a slight blood streak on the surface, you can take it out and control the grease. After frying in the later stage, it will be fully cooked in a few seconds.

Heat oil in another pan, sauté garlic slices until fragrant, add carrot slices and stir-fry until soft, add chili and stir-fry until it changes color, add pork liver and stir-fry over high heat, add pepper and salt, pour in appropriate amount of light soy sauce and appropriate amount of oyster sauce to enhance the flavor, stir well to increase the fragrance and freshness. Pour on a little water starch and serve.
