Green pepper and eggplant shreds
Overview
This is the first time I bought round eggplants to eat. I think they taste better than slender eggplants. They have less skin and more meat, and are soft in the mouth. Adding some minced meat makes them even more delicious.

Add salt, cooking wine and chopped green onion to the minced meat, mix well and marinate for 10 minutes.

Cut the round eggplant into strips, remove the seeds from the green pepper, remove the stem and shred it.

Heat oil in a pot, when it is 50% hot, add garlic slices and sauté until fragrant.

Add minced meat and stir-fry until grayish white.

Add eggplant and stir-fry until soft.

Add green pepper and stir-fry until cooked.

Add light soy sauce to taste.

Add salt, a little sugar, and mix evenly.
