Add cold water to the eggs and bring to a boil, then turn to low heat and simmer for 8 minutes (high heat will cause the eggs to explode)

Peel the eggs and score them a few times with a knife. You can make deeper cuts for better flavor

Put the eggs into the pot, pour in the beer, add salt, sugar, soy sauce, dark soy sauce, and garlic (you can also add some star anise for seasoning if you like)

Stir the soup and eggs with a spoon, cover the pot, cook on high heat for 5 minutes, then reduce to low heat and cook for 10 minutes (the soup will thicken)
