Eggplant with minced meat
Overview
There is only one day off during the Mid-Autumn Festival. Since I fell in love with food, I have been doing all the cooking on my own. I feel that the food cooked by my family is not as delicious as my own, haha, so I took over the Mid-Autumn Festival cooking. I cook for 8 people by myself, and I feel pain and joy at the same time. I love and hate eggplant because it absorbs oil very well. If it is cooked without oil, it will be dry and unpalatable. I eat eggplant every week at the company, but I never eat it because there is too much oil. My aunt likes to cook the eggplant with fatty meat to make oil. She thinks that such eggplant is delicious and economical to eat, but I can't stand it. It makes me feel nauseous when I eat it. LG bought an eggplant at home and put it in the refrigerator. I didn’t want to waste it, so I tried to make eggplant for the first time. I used the least amount of oil to make the eggplant that suits the appetite. LG praised it. He is becoming more and more like a foodie, but this foodie is very picky, haha. In order to celebrate the completion of my Mid-Autumn Festival and look forward to the long National Day holiday, I made minced pork and eggplant to celebrate, haha.

As shown in the picture, cut the eggplant into sections, mince the pork, and chop the garlic finely;

Add minced meat and stir-fry

Add appropriate amount of cooking wine, soy sauce, salt and sugar, stir-fry until evenly colored, set aside;

Clean the pot, heat it up, add an appropriate amount of oil and garlic and stir-fry until the garlic is fragrant;

Pour in the eggplant and stir-fry until the surface of the eggplant becomes darker in color;

Pour a bowl of water, cover, turn to medium heat and cook;

Cook until the water is dry and the eggplant becomes soft;

Pour in the fried minced meat and continue to stir-fry;

Pour in the chopped red peppers and continue to stir-fry until the color becomes darker, then add soy sauce.
