Wash and remove the flesh from the bitter melon, slice into pieces and set aside

Soak fungus in cold water and set aside

Wash the ginger sprouts, white scallions and garlic and set aside

Chop ginger sprouts, mince garlic and scallions

Put water in a pot, add a little salt, a few drops of cooking oil and bring to a boil. Add the prepared bitter melon and blanch the fungus for about a minute

After frying, rinse the bitter melon and fungus with cold water, squeeze out the excess water, add the prepared ginger, garlic, onion, salt, chicken essence, sesame oil, balsamic vinegar, light soy sauce, and sugar and mix well

Mix well and serve on a plate, the bitterness is very small
