Put the medium-sized dough ingredients into a basin, knead into a smooth dough, and refrigerate for 17-24 hours

Tear the medium-sized dough into small pieces, and put the main dough ingredients except butter into the bucket of a chef's machine

Knead at low speed for 5 minutes, then turn to speed 2 for 11 minutes, add butter, and knead for another 5-10 minutes

Knead until fully expanded

Cover with plastic wrap and ferment for 40 minutes
