Purple potato cheese old bread

A very classic old-fashioned bread with some purple potato cheese added. Once you taste it, you will know you can’t stop.

Mix all starter ingredients.

Use chopsticks to stir into a dough. Cover with plastic wrap and leave in a warm place to ferment.

Steamed, peeled and crushed purple sweet potato, about 120 grams.

Add softened cream cheese and sugar and mix well.

Cover the purple potato cheese filling with plastic wrap and set aside.

Let the starter ferment until doubled in size.

Make the main dough with all the ingredients except butter, and add all the fermented starter.

Knead until smooth and fine. Add butter in the extended stage until butter is absorbed.

Place in a basin, cover with plastic wrap and let ferment in a warm place.

Ferment until 2.5 times in size. Take out and press to exhaust.

Divide into nine equal parts, roll into balls, cover with plastic wrap and let rest for 10 minutes.

Take one and roll it into a rectangular sheet.

Spread a layer of purple potato cheese filling, about 30 grams.

Roll up from one side.

Close the mouth and rub it long.

Tie a knot.

Place in a non-stick baking pan. Place at a temperature of around 36 degrees to continue fermentation. You can put a cup of hot water in the oven and put the baking sheet in the oven to ferment.

It will take about an hour to ferment, this is how it will look after fermentation.

Brush the surface with egg wash and sprinkle with crispy chips. Place in the preheated oven at 180 degrees for about 30 minutes.
