Indian Chocolate Milk Tea
Overview
Milk tea, called Chai in Hindi, is pronounced as tea in Cantonese. According to Chinese tea classification, it is a fermented black tea. The difference from traditional Chinese black tea is that the tea leaves are chopped into pieces during processing, and milk and sugar are added when drinking. Milk tea itself also has high and low status: the expensive one is called Masala Chai, fresh buffalo milk is added with various spices such as cardamom, fennel, cinnamon, cloves and pepper. Add water to the milk pot, heat it to boiling, add crushed cinnamon and cook briefly, then add crushed cardamom and cook briefly.
