Fried tofu with chopped pepper
Overview
My family’s general recipes for tofu include minced meat stewed tofu, fish head stewed tofu, catfish stewed tofu, etc., and I often buy soft tofu for cooking. Today I bought a piece of old tofu for a change, cut it into pieces and fried it, then added a little bit of my mother's homemade orange peel and chopped pepper. It has a special flavor and goes well with rice.

Cut the old tofu into 1 cm thick cubes, slightly larger than mahjong tiles. You can also cut them into cubes as you like.

Shred the ginger, separate the green onion and green onion leaves, cut the green onion white into inch-inch sections, and chop the green onion leaves.

Take a small bowl, mix 1 tablespoon of light soy sauce and 1 tablespoon of oyster sauce.

Pour more rapeseed oil into the pot until it is a little hot (it will feel hot when you put your hand a dozen centimeters above the oil), add the tofu cubes and fry slowly over medium-low heat. Don't flip it randomly, as it may break the tofu. If there is a lot of tofu, you can fry it in two batches.

The bottom of the tofu is fried a little brown, so carefully turn it over one by one. If something sticks to the pan, use the bottom of the spatula to shovel it a few times. Don't shovel randomly, as it will break into pieces. Fry all sides of the tofu until golden brown. During the frying process, you can rotate the pan a few times to make the tofu fry more evenly.

Remove the fried tofu.

Pour off excess oil, leaving a little base oil, add shredded ginger and scallions and stir-fry until fragrant. The extra oil can be reserved for frying other dishes. Don't waste it. It doesn't matter if you fry it once or twice. You can continue to cook and eat.

Pour in the fried tofu, the light soy sauce and oyster sauce prepared earlier, and then add 1 small bowl of water.

Add appropriate amount of chopped pepper, stir evenly, cover and simmer for two to three minutes. The chopped pepper is homemade by my mother, and the peel of red orange is added to it, which gives it a special flavor. If you don’t have chopped chili pepper, just add some chili pepper or not add it at all. Taste it for saltiness and season it appropriately if it’s not flavorful enough. In fact, light soy sauce, oyster sauce and chopped pepper are all salty, so there is no need to add salt to this dish.

Fill the small bowl with half a bowl of water, add 2 teaspoons of cornstarch, and mix into starch water.

Pour the starch water into the pot, stir evenly, and cook until transparent.

Turn off the heat, remove from the pan and serve on a plate, and sprinkle with some chopped green onion. A plate of fried tofu with chopped pepper and unique flavor is ready.
