Chickpeas in Tomato Sauce
Overview
Chickpeas are rich in folate, potassium, magnesium, phosphorus, zinc, copper and vitamin B1. They also contain certain amounts of niacin, vitamin B6, pantothenic acid, calcium and fiber. Chickpeas have obvious effects in replenishing blood and calcium, and are the best food for patients with diabetes and hypertension.

Soak chickpeas for more than 4 hours before cooking.

Put the chickpeas and 2 times the water in a pot and bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes. If you need the beans to be softer, cook them longer and add more water accordingly.
