Add onions, ginger, peppercorns, star anise, bay leaves, light soy sauce, dark soy sauce, sugar, soybean paste, cooking wine, and vinegar. Cover and press for 30 minutes. After pressing, turn the stick bones over and press for another 10 minutes.
