Prepare ingredients. One crucian carp, 50g green pepper, 50g red pepper, 10g ginger, 10g chives, 15g bean paste, 20ml cooking oil, 2g chicken essence, 5ml soy sauce, 2g sugar, 5ml cooking wine.

After cleaning the crucian carp, marinate it with 5 grams of ginger slices and cooking wine for 20 minutes.

Slice the remaining ginger, cut the green pepper into sections, cut the red pepper into sections, and mince the chives and set aside.

Add a small amount of oil to the pan, then add the fish and fry until both sides are browned.

Pour cooking oil into the pot, then add bean paste and stir-fry until red oil comes out.

Add ginger slices and stir-fry until fragrant. Then add green and red chilies and continue to stir-fry evenly.

Put the fish into the pot. After the fire is boiled, add soy sauce and sugar to taste. Then turn to medium heat and simmer for seven or eight minutes. Finally, add chicken essence to reduce the juice and remove from the pot.
