First, pour some water: wash the pig's trotters, add cold water to the pot, add the pig's trotters, boil over high heat, cook for about 5-10 minutes, soon there will be a lot of floating oil skin, turn off the heat, skim off the floating oil to avoid sticking to the pig's trotters, then take out the pig's trotters, and pour away the boiled water.

  2. Next, wash and dry the pot, put it on medium heat, pour a little peanut oil, add the ginger slices, stir-fry for a while, then add the pig's trotters flying through the water, stir-fry until the fragrance is released, and the pig's trotters will be slightly browned. Turn off the heat.

  3. Wash the soybeans and soak them one night in advance until they swell. If you forget to soak them the first day, you can soak the soybeans in a thermos bottle 2 hours in advance and they will swell quickly. (The soybeans were almost finished planting before I remembered to take pictures)

Put the fried pig's trotters and soybeans into the purple clay pot, cover the pig's trotters by 3 centimeters with water, turn on the high heat (the electric purple clay pot used here is not very watery, so the proportion of water is small), and continue to simmer for 2.5 hours. The pig's trotters can be pierced with chopsticks. If you like it softer, continue to cook it. The effect of stewing on the stove fire and the clay pot is more fragrant. The method is the same, but the water is folded quickly, so you need to add more water. If you feel that the water is running low in the middle, you can continue to add boiling water. In addition, when the soup is simmered on the stove fire, after 30 minutes of high heat, turn to low heat and simmer slowly, so that it tastes delicious. The time depends on the movement of the chopsticks and personal taste.

  5. Wash the red dates and soak them for an hour in advance. It is better to soak them without soaking them. After cooking the pig's trotters for 2.5 hours, you can add the red dates and rock sugar. Don't add rock sugar too early, otherwise the pig's trotters will easily stick to the pot. At the same time, salt should be added to make the pig's trotters taste better in advance. Adding salt too early is not healthy, but adding it when it is cooked will not taste good.

  6. Continue to cook for another half an hour until the pig's trotters are tender, the red dates are cooked through and soft, and the rock sugar and salt are also flavorful. Add some chopped green onion and bring to the pot.
