Select the celery leaves, wash them, drain them and set aside.

Soak the dried tofu skin in warm water and squeeze it dry after soaking.

Cut into sections and set aside.

Chopped green onions and dried chili peppers, set aside.

Heat a pot, add an appropriate amount of oil, add onions and chili peppers and saute until fragrant, then add celery leaves and bean skins, add a little salt to taste, stir-fry a few times over high heat and it's ready to serve.

Plate and serve.
