I bought two handfuls of rice dumpling leaves and wrapped them up~

  1. Rinse an appropriate amount of glutinous rice, soak it in water for 3-4 hours and set aside

  2. Cut the hind leg meat into one-inch square pieces (if you like fatter, you can use pork belly or pork belly), add light soy sauce, salt, and sugar and marinate for 3 hours

  3. Appropriate amount of red beans and peanuts (if you like to eat beans, you can add more). Soak in water for about 3 hours, then mix with the soaked glutinous rice. Add appropriate amount of sugar, salt, MSG, and dark soy sauce to make it slightly salty and sweet. Then add 2-3 grams of edible alkali and mix well

  4. Soak the rice dumpling leaves in water for a while, then clean them

  5. When wrapping, first put a spoonful of mixed rice and a piece of meat on top, then put another spoonful of rice on top, press it firmly with your hands and poke it a few times with a chopstick to compact the rice, and finally wrap and tie it up

  6. Trim off the corners of the wrapped rice dumplings with scissors and put them into a pressure cooker. The water should soak the rice dumplings. Turn high heat to low heat for 1 hour, turn off the heat, let cool and then open the lid. It will taste better if it simmers for a while

  7. Be careful not to fill it too full, no more than 4/5 of it. Bring to a boil over high heat, then simmer over low heat for no less than 1 hour. Don't open it in a hurry after turning off the heat. Let it cool before opening the lid. The rice dumplings will taste waxier
