Chop the bell peppers.

Cut the octopus into pieces, blanch in water, remove and drain.

Then blanch the peppers and pick them up.

Heat oil in a pot and sauté ginger slices until fragrant, add octopus and stir-fry over high heat. Add soy sauce, oil, balsamic vinegar and sugar and stir-fry.

Pour in the bell peppers and stir-fry, add salt to taste and serve.
