Peel the fresh longan and remove the core. Then chop it into pieces, or crush it with a food processor, add half a lemon juice, crush it together, and pour it into a stainless steel cooking pot.

Bring to a boil over high heat, then reduce to low heat, add sugar, and stir frequently during cooking to prevent sticking to the bottom

Slowly, the color of the sauce will turn yellow and dark, so pay more attention to stirring

Until the juice is almost reduced and turns amber in color, turn off the heat

Cool slightly and then bottle.
