Wash the duck wings and prick them with a fork to marinate them for flavor, then marinate them with two tablespoons of soy sauce, two tablespoons of white wine, peppercorns, chopped ginger, and green onions for more than half an hour.

Pour the old brine you used to braise the meat into the pot, a bowl of water, then add a large spoonful of special soy sauce, chili, peppercorns, a small spoonful of thirteen spices, and a spoonful of white wine and bring to a boil.

Add marinated duck wings, scallions and ginger.
