Overview
Tea eggs are a traditional snack. Generally, eggs are used to make tea eggs. This time I replaced them with small quail eggs. Because quail eggs are small, they are easier to taste and save time.

Clean the quail eggs, boil them in cold water, take them out, crush the shells and set aside.

Boil water in a pot, add tea leaves, star anise, cinnamon, peppercorns, bay leaves, and dried chili peppers and bring to a boil over high heat.

Add light soy sauce, dark soy sauce and appropriate amount of rock sugar and bring to a boil.

Add prepared quail eggs.

Cover the pot and simmer over low heat for about 20 minutes, then turn off the heat and soak for another 2 hours until the flavor is absorbed.
