Orange Crispy Cake
Overview
I made a lot of candied orange peel shreds some time ago. After leaving it for a while, it has become crystal clear. It is perfect for making various baked snacks. I baked this orange peel shortbread yesterday afternoon. It was full of orange aroma and had a crispy texture.

Add rock sugar and orange peel shreds into the mixing cup,

Crush it with a food processor,

In a large bowl, add eggs, corn oil and sugar,

Use chopsticks to stir until thick,

Add orange zest,

Sift in cake flour, baking powder and baking soda,

Use chopsticks to stir into dry powder,

Then gently knead it into a ball and let it rest for 10 minutes,

Divide the rested dough into 16 portions, roll into balls, flatten and put into baking pan,

Brush with whole egg wash,

Put in the oven, middle layer, 180 degrees, upper and lower heat, bake for 15 minutes.
