Clean the hairtail and cut it into appropriate sections, cutting it with two or three slashes at an angle.

Cut onion into sections, slice ginger and garlic.

Put the hairtail fish into a small basin, add salt, cooking wine, half of the ginger slices, and green onions and marinate for half an hour.

Put the marinated hairtail into the oil pan and fry until browned on both sides and take out.

In another pot, heat up the cooking oil and sauté the onions, ginger and garlic, then add a spoonful of chili sauce.

Add another two spoons of tomato paste and saute until fragrant.

Pour half a bowl of water to boil, remove the onion, ginger and garlic. Add light soy sauce, fried hairtail and a spoonful of cooking wine and simmer over low heat until the juice is reduced, then thicken with water starch.
