Overview

  1. Wash the fresh pork belly, wipe off the water, put it in the refrigerator for 20 minutes to facilitate cutting, then cut the skin into 0.5-1cm square dices, wash the dried mushrooms, soak them in water, cut them into dices, wash and chop the onions (purple), and mince the ginger;

  2. Pour an appropriate amount of oil into the pot, first sauté the minced ginger until fragrant, then add the chopped onions and continue to sauté until golden brown. Add in the diced pork belly and stir-fry over low heat until the meat turns white and slightly curled (excess fat is forced out), then add Stir-fry the dark soy sauce, light soy sauce, and rock sugar until coloured. Add an appropriate amount of cooking wine to remove the fishy smell. Add the diced mushrooms and five-spice powder and stir-fry together. Add an appropriate amount of water to cover the ingredients by 1-2cm. After the ingredients are boiled, reduce the heat and cover the pot for 2 hours;

  3. Boil the eggs in another pot, add cold water, add the eggs, boil the water for five minutes, take it out, put it in a bowl, add cold water and let it sit for a while. After the water cools, peel off the egg shells, put them into the braised pork pot and braise them together to make braised eggs;

  4. Rinse the rice, add appropriate amount of water, put it into the rice cooker and cook quickly;

  5. Boil water in another pot, add a little salt, oil and a white spoon of green vegetables, blanch them in cold water and drain them aside;

  6. Finally, serve a bowl of white rice, add braised gravy, add braised eggs (cut in half), and serve with one or two green cabbage hearts or other refreshing side dishes.
