Braised Shrimp
Overview
Actually, Xi'er is not very good at cooking seafood, but the preparation of this shrimp is very simple and can be done in about 10 minutes. Even the children like it very much.

Wash the shrimps, open their backs and remove the mud lines, and cut off the shrimp whiskers. If feeding it to children, it is recommended to remove the head.

Put the shrimp into a container, add 2 tablespoons of cooking wine, mix well and marinate for about 10 minutes.

Mix soy sauce, vinegar and sugar with half a bowl of water and set aside.

Add base oil to the pot, heat it up and add the prawns, fry until they turn red on both sides, remove and set aside.

Use the shrimp oil in the pot to sauté the green onions and ginger slices.

Pour the prepared sauce into the bowl and bring to a boil.

Add fried prawns to the soup.

Add salt to taste, cover the pot and simmer for two to three minutes. Open the lid to collect the juice, then sprinkle in a little chopped green onion and serve on a plate.
