First soak the dried cowpeas in water, firstly to remove the saltiness and secondly to cook them faster, then cut them into sections, cook the pork belly in water, cut them into small pieces, and slice the ginger.

Heat oil in a pan, add peppercorns, ginger, garlic, star anise, spices, etc. and sauté until fragrant, then scoop out the accessories. Pour the meat in and stir out some oil. If you feel there is too much oil, scoop out some.

Then start coloring the sugar, put oil in the pot, don't need to heat it very much, add rock sugar, how much to put is up to you, if you like it sweet, put more, if you don't like it, put less, then slowly stir until the pot is slightly soaked and the meat turns brown, continue to stir-fry, mainly to stir out some oil.
