Stir-fried kale with ginger sauce
Overview
Stir-fried kale with ginger juice was my favorite dish when I was a kid. The crispy kale, strong flavor of ginger juice, and the faint aroma of brandy fill your mouth with a fragrant and sweet taste. What a wonderful childhood memory, today I revisit this Cantonese dish: stir-fried kale with ginger sauce.

Prepare kale and ginger. Wash the kale. I bought kale seedlings, which are relatively short, so there is no need to pick them up, just wash them. Crush the ginger and set aside.

Kale contains organic alkali and has a unique bitter taste, so scald the kale with boiling water to remove the bitter taste.

Drain the kale and set aside.

Heat oil in pan.

After the oil is hot, add the chopped ginger and saute until fragrant.

Add kale and stir-fry over high heat.

Stir-fry for 10 seconds and add appropriate amount of salt and sugar to taste.

Add appropriate amount of light soy sauce and MSG and stir-fry evenly.

Finally, add a spoonful of brandy and stir-fry until it smells fragrant.
