Fried pumpkin with salted duck eggs
Overview
Although baked pumpkin with egg yolk is delicious, it is not easy to control the heat, and fried food is not healthy enough. Stir-fried pumpkin with cooked salted duck eggs is also delicious and more nutritious and healthy.

Home-made salted duck eggs cooked

Peel and chop into small pieces (I boiled two duck eggs and found that one is enough)

Peel the pumpkin

Slice (about 2-3 mm, not too thin, otherwise it will break when fried)

Heat oil in a pan, sauté onions and ginger until fragrant

Add diced salted duck eggs

Fry until the diced salted duck eggs are foamy, be careful not to burn them
