Beef Bitter Gourd

Overview

The sowing of bitter melon will reap the rewards. As a Guangzhou native, I have no reason to forget our classic dish of bitter melon and stir-fried beef. I used to call it bitter melon and beef when I went to have a work meal or order a plate of rice. Now that I have the conditions and ingredients, I must serve it. I happened to have a piece of steak in the refrigerator that was not very good, so I cut it, marinated it, and fried the bitter melon.

  1. Cut the beef into thin slices, add 1/2 tsp salt, 1/2 tbsp light soy sauce, 1/4 tsp sugar, 1/2 tsp pepper, 1/4 tsp ginger powder, 1/3 tsp soda ash, 1 tbsp cooking wine, marinate with your hands until it feels sticky, add 1 tbsp water, and then scratch until the water is absorbed. It still feels sticky. You can add 1 tablespoon of water and wait until the water is absorbed. Then add 1 teaspoon of corn starch and mix evenly. Finally, add 1 tablespoon of vegetable oil and mix evenly. This will lock the moisture in the beef and fry it smoothly. Let it sit for 3 hours or put it in a dense box and put it in the refrigerator overnight.

  2. Slice bitter melon and slice garlic;

  3. Turn on medium heat, add about 2 tablespoons of oil to the pan, stir-fry the beef until cooked, set aside;

  4. Turn the pot back on over medium-high heat, add oil and garlic, and sauté until fragrant;

  5. Pour in the bitter melon, stir-fry for a while, add 1/2 teaspoon of refined salt, 1/2 teaspoon of sugar, and stir-fry until half cooked;

  6. Pour in the beef and stir-fry evenly. You can add a little water starch (1/4 cup water + 1 teaspoon cornstarch) to thicken it or not. Sprinkle 1 teaspoon sesame oil and stir it a few times. Take it out of the pan and serve it on a plate.
