Chives and Pork Dumplings
Overview
Xiaonian is the prelude to the Spring Festival, and its excitement is second only to the Chinese New Year. The twenty-third day of the twelfth lunar month in the north is called Xiaonian, which means the end of the year. In cities and rural areas, families eat dumplings and drink wine to celebrate like the New Year (Spring Festival).

Add water to flour and knead into soft dough and relax

Make use of the resting time of the dough to prepare the meat filling: Peel the ginger and mince it into the meat paste

Add a little cooking wine, light soy sauce, dark soy sauce, and pepper and stir in one direction

Wash, drain and mince the leeks

Add appropriate amount of salt and minced meat and mix well

Knead the rested dough evenly and divide it into evenly sized balls

Flatten it into a thick dumpling skin with thin sides

Take an appropriate amount of meat filling and wrap it in the dumpling wrapper, then wrap all the fillings in turn

Add cold water to the pot and bring to a boil over high heat, then add the dumplings and cook. Add cold water 2-3 times during this period and cook until the dumplings are cooked
