Pineapple Cranberry Sticky Rice
Overview
Taiwanese pineapples have a strong sour and sweet taste. The remaining half of the pineapple was used to make a dish that my son loves. The pineapple and cranberry glutinous rice is steamed with pineapples, cranberries, cherries, red beans and glutinous rice. The original sweetness of the flesh and the glutinous rice are combined to taste great. It is loved by the family.

Wash the glutinous rice and soak it until it can be easily crushed with your fingers. Wash the red beans and soak them until they swell

Prepare cherries, dried cranberries and pineapple

Use a knife to cut the pineapple into a cross, then draw a circle around the pineapple and take out the pulp

Wash the cherries and remove the core. Use a knife to cut the pineapple into triangles. Soak the pineapple together with the pulp in light salt water for ten minutes and then remove it.

Mix pineapple meat, red beans, glutinous rice, cherries and dried cranberries together in a bowl

Steam in a cold water steamer and take it out

Then add the cooked fruit rice into the pineapple shell and steam for 5 minutes.
