Ginger water: Put ginger and green onion into a bowl and soak in appropriate amount of water.

Remove the skin, bones and dark meat from the fish.

Chop.

Add the egg white of 1 egg (do not put the egg yolk), appropriate amount of cornstarch, salt, and ginger water in step 1 (do not include ginger and green onion).

Stir in one direction for 200 times and pinch out a ball with the tip of your hand.

Fill the pot with cold water in advance and squeeze the spherical fish balls into the cold water.

Turn on the heat and cook until the water boils.

Filter water.

Soak in cold water. (The fish balls will be chewier and more delicious).

Filter the water, make soup or eat hot pot, and store the excess in the refrigerator.
