Heat 20 grams of butter over water and melt into liquid

Take another milk pot, add 105 grams of milk, add 15 grams of caster sugar, drop in 2 drops of vanilla water, bring the milk to a boil, pour it into the batter in step 2, and stir evenly while pouring

Return to low heat and stir constantly until boiling and reduced to a paste. Cool until not scalding, set aside

Separate the yolks and whites of the 2 eggs, add the yolks to the non-scalding batter in step 5 and stir evenly

Beat the egg whites, put the egg whites into a water-free container, add 15 grams of fine sugar in two portions to the egg whites, and beat the egg whites until they have straight peaks. The whole journey takes about 2 minutes

Add the whipped egg whites into the batter in step 6 in two batches, stir evenly to form a soufflé batter. Note that the mixing process is the same as making chiffon cake. Stir left and right, not in circles, otherwise it will defoam.

Prepare the baking bowl. Grease the baking bowl with a layer of butter. Pour in the granulated sugar and shake evenly. Pour the excess sugar into the next baking bowl and continue.

Pour the soufflé batter into the baking bowl, because it will expand when baking, fill it 8-9 minutes full

Heat the upper and lower racks of the oven to 180 degrees and bake for 18-20 minutes. Adjust the time appropriately according to different ovens. Observe that the batter expands out of the baking bowl and the surface turns golden brown before serving. If the time is 2 minutes longer, the surface layer will be crispier.

Once out of the oven, sprinkle with powdered sugar and serve hot.
