Tomato, Nepeta and Egg Drop Soup

Beat the eggs.

Set aside appropriate amount of water starch.

Clean the Nepeta and set aside.

Wash the tomatoes and cut into small cubes.

Heat appropriate amount of oil in the pot.

Pour in the tomatoes.

Fry until pureed with the help of a spatula.

Pour in appropriate amount of water and bring to a boil.

Water starch is hooked in. It’s better to be thin than too thick. Otherwise, the egg drop will break into little bits and pieces after being beaten into it.

Pour in the egg liquid in a circular motion.

When the egg drop floats, season with appropriate amount of salt, light soy sauce and mature vinegar and turn off the heat.

Add the Nepeta.
