Cut the pork belly into mahjong-sized pieces, soak in water for an hour, and add some cooking wine.

Boil the quail eggs, peel them and set aside.

Add cold water to the pot, add seasonings, peppercorns and cinnamon. After the water boils for five minutes, take out the meat and pick out the aniseed cinnamon for later steps.

Use a non-stick pan to degrease the meat to prevent it from being greasy.

Put oil in the pot, add rock sugar, simmer over low heat until the sugar changes color and bubbles, then quickly add it in. Don't cook it for too long or the meat will become bitter.

Heat water, light soy sauce, onion, ginger, garlic, aniseed, cinnamon, and salt. I don’t have dark soy sauce at home, so I should add some dark soy sauce for color. Cover and simmer for forty minutes.
