Soak purple rice one night in advance, put it into a food processor and add purified water to make rice juice.

Put high-gluten snow powder in a large pot, add sugar and yeast, and pour in purple rice juice.

Stir into fluffy form.

Knead the dough and wait for fermentation (time depends on temperature).

After fermentation, rub and deflate, and divide into small portions.

Knead each one into a round shape and make it into a steamed bun shape.

Put it in the steamer and wait for it to rise again.

Pour cold water into a pot, boil it and steam for 15 minutes, then simmer for 3 or 5 minutes!
