Cut the Spanish mackerel into pieces.

Slice tofu.

Prepare onions, ginger, garlic, and star anise.

Slices of green onion and coriander are used when cooking.

Add in the sauce in sequence: an appropriate amount of soy sauce, a small spoonful of sugar, a little cooking wine, and stir evenly.

Pour oil into the pot, preheat it a little, then add star anise and stir out the flavour.

Stir-fry the star anise until fragrant. Add onions, ginger and garlic and stir-fry until fragrant.

Then put the fish on the onion, ginger and garlic.

Pour over the prepared juice and add some water.

Cover the pot and simmer over high heat.

After boiling the pot, add tofu, cover and simmer over low heat.

Simmer for about fifteen minutes.

After the flavor is absorbed, reduce the juice over high heat.

Add onions and coriander.
