Material.

Wash the tofu and cut it into two pieces in the middle. Chop the onion, ginger, garlic and pepper into mince. Take a small bowl and add a spoonful of starch, a spoonful of light soy sauce, a small spoonful of salt, a small spoonful of chicken essence and half a bowl of water. Mix well and set aside.

Wash and heat a pan, add an appropriate amount of cooking oil, add tofu cubes and fry over medium heat until both sides are golden brown.

You can see that the sides are golden and have small bubbles.

Add ginger, garlic, chili and Sichuan peppercorns and stir-fry until fragrant. Hold the handle of the pot and shake it so that the tofu will not rot easily.

Add the prepared sauce and continue to shake the pot handle.

Evenly coat both sides with the sauce, sprinkle with chopped green onion and red pepper rings and serve. (You don’t have to make the chili rings according to your preference.)
