Luffa Braised White Jade Mushroom
Overview
Luffa is commonly cultivated in the south and north of my country, and is also widely cultivated in temperate and tropical regions of the world. It grows wild in southern Yunnan, but the fruit is shorter and smaller. The fruit is a summer vegetable. When mature, the mesh fiber inside is called loofah. It can be used as a substitute for sponges for washing stoves and furniture. It can also be used for medicinal purposes, with cooling, diuretic, blood-activating, menstrual flow, and detoxifying effects. Luffa contains protein, fat, carbohydrates, calcium, phosphorus, iron, vitamin B1, vitamin C, as well as saponins, plant mucus, xylan gum, luffa bitters, and citrulline. Luffa is juicy, sweet and can be cooked in a variety of ways. It can be stir-fried, steamed or made into soup. It is very suitable for eating in dry weather. Cut off the roots of the white jade mushrooms and separate them. Wash them. Boil water in a pot. When the water is boiling, add the white jade mushrooms and blanch them for one minute. Remove and set aside.
