Wash the raw materials and set aside.

Cut cucumber and pepper into strips, about 1cm wide.

Put the cut cucumber strips and pepper strips into the bowl. Place the peppers on the ground because they float easily.

Heat oil in a pan and add dried chilies. Saute ginger, star anise and bay leaves until fragrant.

Pour in soy sauce and a small amount of vinegar, bring to a boil, then turn off the heat and allow to cool until not hot.

Pour the cooked soy sauce into the bowl with the cucumber strips.

After two or three hours, the cucumbers will be pickled with a lot of water and you can eat them.
