Northeastern Snacks No. 4 - Bean Braised Noodles

In fact, this can’t be considered a snack, but the foods that are very popular in the Northeast are all lumped together here. My favorite flavor when I was a child was my mother’s stewed one-pot noodles.

Wash the kidney beans and break them into small pieces, peel and cut the potatoes into cubes, and slice the pork.

Heat a small amount of oil in a pot, add garlic and star anise, and stir-fry until fragrant. Add meat slices and stir-fry until they change color.

Then add the kidney beans and continue to stir-fry until they change color

Add potatoes. Stir fry.

Add dark soy sauce, light soy sauce and bean paste and stir-fry

Add enough water to just cover the vegetables in the pot. Bring to a boil over high heat and simmer over low heat.

When the kidney beans and potatoes are about eight ripe, add salt and chicken essence, add the noodles, spread them over the kidney beans, and simmer until the soup boils.
